Potato Cheese Soup

Ingredients
SOUP:
6 potatoes peeled and diced
2 cups carrots chopped
2 cups celery chopped
4 bouillon cubes (chicken)
1 tbsp parsely flakes
5 cups water
2 tsp salt
1/4 tsp pepper
1/3 cup butter (I skip this one)
 
SAUCE:
3/4 cup butter
add 2/3 cup flour
1 1/2 cup milk
1 cup cheese (you can add more if wanted)
cook until thick
 
Instructions
In a large pot bring soup ingredients to a boil.  Boil 10 - 15 minutes until veggies are tender.  While it is cooking make cheese sauce.  Stir into soup and serve.
